Healthy Meal: Veggie Noodles + Chicken Meatballs

Hey guys! I am always on the verge of looking for new healthy recipes to try and once I find one that catches my eye I am always excited to try it.

I have been keeping a close eye to my diet because I want to become a healthier and leaner person, and also I want to avoid having to suffer from different health conditions in the future. In this process I have found that healthy does not have to be boring. There are so many yummy recipes that will help us maintain out health. I want to share a meal idea that I found to be super delicious with you guys today!

If you love pasta but you are trying to lose weight or eat healthy, I have found a great substitute: veggie noodles! These are great, very few calories, carbs and you can flavor them any way you like.

VEGGIE NOODLES

-I used a Julienne peeler to make carrot and yellow squash noodles.

-I used one big carrot and one yellow squash (more less the same size). This yields for about two (2) servings.

-I heated a pan, then poured some olive oil, garlic and then tossed the noodles. I sauteed them in low heat until tender.

-I added some chopped onions and pepper and sauteed them as well.

-I sprinkled some dry sweet basil, oregano and thyme leaves.

-When serving, mix with favorite sauce (Marinara, Pesto, Alfredo, etc.), though, they are good to eat them plain. I mixed with pesto sauce and served with the chicken meatballs.

CHICKEN MEATBALLS - RECIPE REVIEW

For the chicken meatballs I found a recipe in YouTube from the No Recipe Required blog. In this recipe Dave actually uses ground turkey, but I wanted to use chicken, so I swapped that. He adds ketchup to flavor it, but I decided to omit that ingredient.

-Ground chicken

-1 small onion, diced

-1 carrot, grated

-1 tbsp garlic powder

-½ cup bread crumbs (I did not have this at the time, so I substituted with crushed crackers)

-1 egg

-2 tablespoons finely chopped parsley (I also added oregano and thyme to taste)

-Salt and pepper to taste

-1/3 cup grated parmesan cheese

-I mixed all the ingredients in a bowl.

-In a large heated skillet poured some olive oil and started placing the meatballs.

-I cooked them until they had a golden color on each side.

-I topped these with some Alfredo sauce and parmesan cheese.

-They are tasty and light!

-If you want to keep it really healthy, omit the Alfredo and parmesan cheese when serving.

-Definitely will be making this recipe again.
